Bio

Jesus Vazquez is a traditional and professional Mexican baker. Panadería Las Cuatas, the family’s business in Madras, opened in 2008. The bakery has a large clientele including grocery stores, restaurants, and individuals from throughout the region. Vazquez learned the trade from his father in his North Hollywood, California bakery as well as from his grandfather at his bakery in Mexico. Vazquez, who studies at the local community college, is a full-time baker. To create his traditional pan dulce (sweet bread), Vazquez combines all the ingredients into a large mixer and then divides the dough into smaller portions. After placing various pastry shapes on trays, he tops them with sugar, icing, cinnamon, molasses, or other flavorings. Some pastries are stamped with a unique design. Vazquez sells his pastries at Panadería Las Cuatas and also delivers to other stores.
